Squash, any type
Any other type of veggies from the garden
Meat--anything in the fridge- cooked beef, chicken, pork, smoked sausage
1/2 cup salsa, any kind
1 clove garlic, chopped fine
seasonings to taste
chips or soft taco shells
Sprinkle some olive oil into pan
Slice the veggies in strips to fill up the frying pan.
Stir in salsa, garlic, seasonings
Cook on medium high heat until onions are clear and veggies are cooked
to taste--some like the veggies soft, some like crunchy
Stir often to keep from burning.
Serve over chips or shells.
Top with sour cream and shredded cheese
