DRIED VEGGIE and MEAT SOUP


The resident agronomist has been hard at work in his
garden--along with canning and drying the fruits of his labor.
Here is a just-add-liquid soup I plan to try
when the cold winds blow this winter.
Of course I plan to use my trusty crock pot!
Remember that dehydrated food flavors are super concentrated
since the water has been removed. For example: onions are stronger
and tomatoes are sweeter.
This is a basic recipe, add and subtract ingredients to your taste
and what is available.

For a great gift--layer dried ingredients and beef gravy mix in a
pretty jar. Attach a label with other ingredients and instructions.



1 cup dried sliced or cubed potatoes
1/8 cup or less dried onions
1/2 cup dried tomatoes
1/2 cup dried corn
1/2 cup dried carrots
1/2 cup dried green beans
1 pound cooked  and drained ground meat
1 package beef gravy mix
1 can beef broth
1 quart canned tomatoes
Add any beans--optional
Add water if needed to cover all of the above.

Mix together in a large pot, simmer on stove
or put in a crock pot to simmer all day.

Here is another idea from NASA to view the eclipse without
looking directly at the sun:

"An alternative method for safe viewing of the partially eclipsed sun is pinhole projection(link is external). For example, cross the outstretched, slightly open fingers of one hand over the outstretched, slightly open fingers of the other, creating a waffle pattern. With your back to the sun, look at your hands’ shadow on the ground. The little spaces between your fingers will project a grid of small images on the ground, showing the sun as a crescent during the partial phases of the eclipse. Or just look at the shadow of a leafy tree during the partial eclipse; you'll see the ground dappled with crescent Suns projected by the tiny spaces between the leaves."

Sometimes crafts or projects just don't 
work out as planned. There is nothing 
wrong with not finishing a project--but 
be sure to have some closure so it isn't
sitting there taking up creative space.
If the project materials can be salvaged,
donate to a worthy cause.
Sometimes it is just better to dispose of.
But don't feel as if you have failed,
the enjoyment was in the process.

Chicken and Rice

Here is a go-to recipe for busy days. 
My oldest updated the recipe from his childhood.
Here is his version:
He puts it in the oven, but we decided it could 
also be a crock pot meal--
just be sure to use a liner. 


One can cream of celery
One can cream of Mushroom
One can water
One box Uncle Ben's long grain rice original recipe
Mix all in a bowl and pour into glass baking dish. 
Set raw chicken thighs(with skin)on top of rice mixture. 
Cover with foil and bake 350degrees for 2.5 hours. 
(Longer in the crock pot start out on high, turn to low.)
