DRIED VEGGIE and MEAT SOUP
The resident agronomist has been hard at work in his
garden--along with canning and drying the fruits of his labor.
Here is a just-add-liquid soup I plan to try
when the cold winds blow this winter.
Of course I plan to use my trusty crock pot!
Remember that dehydrated food flavors are super concentrated
since the water has been removed. For example: onions are stronger
and tomatoes are sweeter.
This is a basic recipe, add and subtract ingredients to your taste
and what is available.
For a great gift--layer dried ingredients and beef gravy mix in a
pretty jar. Attach a label with other ingredients and instructions.
1 cup dried sliced or cubed potatoes
1/8 cup or less dried onions
1/2 cup dried tomatoes
1/2 cup dried corn
1/2 cup dried carrots
1/2 cup dried green beans
1 pound cooked and drained ground meat
1 package beef gravy mix
1 can beef broth
1 quart canned tomatoes
Add any beans--optional
Add water if needed to cover all of the above.
Mix together in a large pot, simmer on stove
or put in a crock pot to simmer all day.
