Thursday Treatz

Sausage Skillet Dinner

(This is a very versatile and quick meal. Use whatever veggies are in season.)

1 package smoked sausage, cut into bite size pieces
1 cup rice, cooked. (I like to use the brown rice mix)
1 green (or other color) pepper, diced or cut into strips
1 med. onion, cut into chunks--optional
1/2 cup dried tomato, or 1 small can tomato sauce, or a fresh 'mater
1 can chicken broth
1 cup broccoli
1 clove garlic, or garlic salt
cheese to sprinkle on top


1. Saute the onion and garlic in a small amount of olive oil in a large skillet
2. Add peppers and cook for a bit
3. Pour in chicken broth, bring to a boil
4. Add all other ingredients, turn down to simmer
5. Cook until heated through and the veggies are done to taste, some like the veggies crispier
6. Serve with cheese on top
